So we got a few beets this week in our CSA and instead of letting them perish due to my lack of knowledge of how to prepare them (like I did last year), I researched and cooked em up. I boiled them for 30 minutes until they were nice & tender, skinned them & sliced them. They look really official and really hot pink so I must have done it right.
Too bad that Mark dislikes beets...but he will eat them.

Beets used to freak me out, but they're quite good (especially in salad).
